Label Rouge Quality
In 1992, Scottish salmon was the first fish and first non-French product to be awarded the Label Rouge quality mark, the official endorsement by French authorities of the superior quality of food or farmed products, particularly with regard to taste. To obtain this recognition, products must meet a very stringent set of approved standards throughout the production chain, including farming techniques, feed, processing and distribution.

Nor-Sea foods smokes oil-rich fish, primarily mackerel and herring, at its base in Fraserburgh. The company is strict about seasonality: mackerel caught during the winter are in peak condition and have the best fat content for smoking. Kippers are different: produced from herring that are caught in a very short window during the summer months when quality is optimal for smoking. They are either traditionally split whole or butterfly filleted before being cold smoked.

The Crab Company Scotland
The Crab Company (Scotland) Ltd was founded in 2016 to provide high quality, premium Scottish shellfish to key markets throughout the world, but principally Asia.
The company has a brand new, highly sophisticated processing facility on the quayside at Peterhead where shellfish skippers can easily land their catch in to the company. Sourcing crab, lobster, king scallops and other shellfish from other ports in Scotland will enhance the supply from local fishermen in Peterhead and Fraserburgh.
The company offers crab as either whole cooked and then blast frozen or as a live product. European lobster will also be offered as a live product. King Scallops, razor clams, whelks and langoustine will be exported as either chilled or frozen.
Anderson Pelagic Ltd is a sister company to Crab Company Scotland and offers a wide range of pelagic species such as Atlantic mackerel, herring, blue whiting, capelin and horse mackerel, again mainly for markets in Asia.
The company will target new and expanding markets in Asia and the Middle East for both frozen and live products in to retail and food service sectors. Attendance at SEG 2017 is part of ongoing research the company is undertaking to assess trends in retail and food service seafood development.
